Lazy Girl Chicken Salad

Last week I really wanted some good chicken salad. I had actually been thinking about it all week. I admit that’s odd, but I’ve always loved a good chicken salad. I mentioned this while working out with clients one morning and we all agreed that there really wasn’t any place to get it without it being full of mayo and unhealthy fat.

Which left me with making it . If you know, making a good chicken salad can be quite time consuming. I was having a pretty busy week as it was and was just too lazy to add that to my list. Which brought me to making it the lazy way, and I’ve been eating on it for the past three days.

It takes all of four ingredients, all of which I had on hand. So, here you go.

You need:

4 chicken breasts, cooked and shredded. I actually had cooked 6 chicken breasts in the crock pot earlier in the week and had them in the refrigerator. I used my Kitchenaid Mixmaster with a dough hook to shred the chicken. If you haven’t tried this, well, you are welcome. Biggest time saver ever!

1 cup of celery, chopped. I did not measure this as I was making it so go by what makes you happy. I love the crunch of celery so I tend to want a lot.

1/4 Cup (or slightly more) of Avocado Oil Mayo. *Again, I do not measure, but I do NOT like it mayonaissey, so I put in a dollop, stir, and judge whether to add more or not.

1 T yellow mustard (give or take). This is my secret sauce. I like just a little for some kick. Not enough to turn it yellow!

Lots of Black Pepper

Stir it up!

So I guess there are technically five ingredients. It’s honestly all you need. Of course, if you are one that likes to add “the things”, the sliced almonds, walnuts, grapes, whatever, you have a good base to begin.

There’s really no excuse to not have this in the fridge all summer! ☀️
