Simple meals for Free Birds

Did you know there’s a much better term for Empty Nester? And I’m thinking it sounds a lot more fun to of call those of us in this season Free? Birds than Empty Nesters. It sounds much more uplifting and fun, don’t you think?

Anyway, one of the biggest changes for me was learning to cook for less than five hungry men and eat good for me meals that are easy and take barely any time to prepare AND provide more than one meal. I mean, one and done.

Lately, I’ve also felt the need to pay more attention to what I am eating, the balance on my plate, and track my protein, fiber and fat. I’ve had more energy and feel lots more balanced than some of my old habits of too long fasting, grabbing out of the pantry and “winging it”. I’ve learned a lot with a new certification I’ve been working on that has tons of easy to use meal suggestions. So, if this sounds like you too, I got you.

I thought I’d give you some ideas for quick meals that you can have on hand that are so simple, good and balanced with real food nutrition. They are perfect for your Free Bird season and schedule!

They also include a balance of protein, fiber and healthy fat, which is what I have been focusing on lately. That has been a game changer for me as far as resetting my nutrition and my goals, especially while I’ve not been able to be as active as normal. I’ve had a lot more energy and not reaching for a handful of nuts or a bar in the afternoon. That’s a big change!

Hamburger bowl, with mushrooms, mixed greens, pepperoncini and jalapeno dressing.

Sauteed Shrimp over greens with avocado and balsamic dressing

Salmon, edamame and cauliflower rice

Ground turkey, butternut squash (from frozen) and shaved Brussel sprouts with a little avocado

Egg and avocado over a wasa cracker

Did that give you any ideas? These are all so easy to whip up without needing a recipe. Cook like you like and season like you like. Not boring and always tasty. Done and Done.

I’m currently checking my Instacart list, which is even easier since I typically buy the same things! While winging it works sometimes, I think we all do better and feel better with a plan and cooking at home as often as we can.

Cheers to a Big week ahead:
