This is one of my all time favorite creations to make in the summer. My old recipe is full of butter, cream, crust, carbs and gluten. While delicious it can leave you feeling a little sluggish. THIS version is crustless but still has all the flavor. I hope you’ll give it a try!

Healthy Banana Pudding

Recently I had a bunch of bananas on the edge, if you know what I mean, AND a huge sweet tooth. I found THIS recipe for a healthier banana pudding and am so glad I tried it. It uses ALL of four ingredients - that you likely have on had (and no pudding required). Definitely perfect for the summer.

Cowboy Coleslaw

I just discovered this simple recipe and it has the perfect combo of a little kick, crunch and tanginess to make a perfect side. I’ve even found myself eating it on top of a wasa cracker for a little snack.

I actually left out the corn when I made it and also added garabonzo beans, so I think it’s the perfect thing to add your own flavor.
